Preheat oven to moderate.
Combine sugars, sifted flours and nuts in a large bowl.
Add combined butter, egg, egg yolk and extract; mix to a soft dough.
Place one heaped tablespoon of the biscuit dough, about 6 cm apart, on lightly greased oven trays.
Bake in a moderate oven for about 16 minutes or until browned lightly. Cool on trays

TIPS......Store cookies in an airtight container for up to two weeks.
Suitable to freeze for up to three months.
