Chocolate Chip Cookie Recipe

220g firmly packed brown sugar
110g castor sugar
225g self raising flour
75g plain flour
I cup coarsely chopped macadamia nuts toasted
185g melted butter cooled
I whole egg beaten lightly
1 egg yolk beaten lightly
2 teaspoons vanilla extract
200g dark eating chocolate chopped coarsely

Method

How to cook

Preheat oven to moderate.

Combine sugars, sifted flours and nuts in a large bowl.

Add combined butter, egg, egg yolk and extract; mix to a soft dough.

Place one heaped tablespoon of the biscuit dough, about 6 cm apart, on lightly greased oven trays.

Bake in a moderate oven for about 16 minutes or until browned lightly. Cool on trays

TIPS......Store cookies in an airtight container for up to two weeks.

Suitable to freeze for up to three months.
